PANDAN CHIFFON CAKE

Bahan :
6 kuning telur
175 gram gula pasir halus
100 ml minyak selada
150 ml santan dari 1/2 butir kelapa
250 gram tepung terigu, ayak
1 sdt baking powder
1/2 sdt soda kue
pasta pandan secukupnya
8 putih telur
1 sdt cream of tartare
100 gram gula pasir halus
Hiasan : taburan gula bubuk dan ceri merah

Cara membuat :

1. Panaskan oven dengan temperatur 180 derajat Celcius siapkan loyang chiffon
bentuk cincin ukuran 22 cm, alasi dengan kertas roti dan basahi dengan air,
sisihkan.
2. Aduk rata kuning telur dan gula pasir, masukkan minyak selada, santan dan
tepung terigu, baking powder dan soda kue, aduk hingga menjadi adonan yang
kental. Tambahkan pasta pandan aduk rata.
3. Kocok putih telur bersama cream of tartar masukkan gula pasir sedikit-sedikit
sambil terus dikocok hingga mengembang dan kaku.
4. Campurkan putih telur kedalam adonan telur, aduk rata, tuangkan kedalam loyang
dan panggang selama 45 menit hingga matang.
5. Setelah matang, angkat, balik loyang atau gantungkan terbalik pada botol, setelah
uap panasnya hilang kue akan terlepas. Setelah kue dingin taburi dengan gula
bubuk dan hias dengan ceri merah.

STRAWBERRY RING CAKE

Bahan :
275 gram tepung self-raising
1 sdm kayu manis bubuk
100 gr gula palem
60 ml minyak selada
250 ml jus apel
1 buah apel kupas potong dadu
100 gram strawberry segar potong dadu
Hiasan : strawberry segar, irisan apel dan selai strawberry

Cara membuat :

1. Panaskan oven dengan temperature 180 derajat celcius, siapkan loyang bentuk
cincin ukuran 1 liter.
2. Campur tepung self-raising dengan kayu manis bubuk dan gula palem, aduk rata
masukkan minyak selada dan jus apel, aduk rata.
3. Tambahkan irisan apel dan strawberry, aduk rata tuangkan ke dalam loyang.
4. Panggang selama 35-40 menit, angkat dan hias dengan irisan strawberry, apel dan
selai strawberry.

LEMON APPRICOTE CAKE

Bahan :
175 gram mentega
175 gram gula pasir
3 butir telur
225 gram tepung self-raising
1 sdm parutan kulit jeruk lemon
175 gram apricot kering, iris
150 gram kacang mete sangrai, cincang
Syrup oles : 3 sdm apricot, 1 sdm air dan 50 gram gula pasir, panaskan
Taburan : almond, iris secukupnya

Cara membuat :

1. Panaskan oven dengan temperature 180 derajat celcius, siapkan loyang bentuk
segiempat ukuran 22 x 15 x 7 cm olesi dengan margarine dan alasi dengan kertas
roti.
2. Kocok mentega bersama gula hingga lembut, masukkan telur satu persatu sambil
terus dikocok.
3. Masukkan tepung self-raising, aduk hingga rata, tambahkan apricot kering dan
kacang mete.
4. Panggang selama 40-50 menit angkat dan taburi dengan irisan almond dan syrup
apricot.

SUP IKAN KUAH SANTAN

Bahan :
500 gram daging ikan kakap, potong menurut selera
3 lembar daun jeruk
2 batang serai, memarkan
30 lembar daun kemangi
1 liter santan dari 1 butir kelapa
2 sdt garam, 1 sdt merica bubuk
4 buah tomat segar, potong dadu kecil
2 batang wortel, potong dadu kecil
150 gram jamur kancing segar
1 batang daun bawang, iris halus
2 sdm minyak goreng
5 sdm air jeruk nipis
2 sdm saus/kecap ikan
Haluskan :


2 cabai merah besar
7 cabai rawit merah
5 siung bawang merah
3 siung bawang putih
Cara membuat :
1. Daging ikan kakap, cuci bersih, lumuri dengan jeruk nipis dan garam, diamkan
sebentar, cuci bersih kembali dan tiriskan. 2
2. Panaskan minyak tumis bumbu halus hingga harum, masukkan santan, rebus
kembali, masukkan garam, merica, daun jeruk, serai. 3
3. Setelah mendidih masukkan ikan gurami, wortel dan jamur masak hingga ikan
matang, tambahkan potongan tomat, daun bawang dan daun kemangi, masak
sebentar, angkat. Sajikan hangat.

SUP TAHU BROKOLI

BAHAN:
250 gram brokoli
50 gram taoge, siangi
1 bungkus tahu telur/eggtofu, potong-potong
1 batang daun bawang, iris
300 gram kwetiau
2 sdm minyak goreng
1 sdm minyak wijen
3 siung bawang putih, cincang
1 liter kaldu ayam
1 sdt garam, 1/2 sdt merica bubuk
1 sdm kecap cap BANGO rasa asin

CARA MEMBUAT:


1. Panaskan minyak goreng dan minyak wijen, tumis bawang putih hingga
harum. Masukkan kaldu ayam, garam, dan merica bubuk, didihkan.
2. Masukkan brokoli, tahu, daun bawang, dan taoge, masak hingga sayuran
matang. Tambahkan kecap cap BANGO rasa asin, aduk rata.
3. Masukkan kwetiau, masak sebentar, angkat.
4. Sajikan hangat.

Cioppino Recipe

Ingredients

Seafood
3 pounds halibut, sea bass, or other firm white fish, cut into inch-long cubes
1 large (2 lb or more) cooked Dungeness crab (hard shell) or a cooked lobster
1 pound (or more) of large shrimp
2 pounds little neck clams, mussels, or oysters or all three

Sauce
1/2 cup olive oil
1 1/2 cups chopped onion (1 large onion)
1 cup chopped green bell pepper (1 large green bell pepper)
3 coves garlic, minced
1 teaspoon salt
1 28 ounce can tomatoes
Broth from the mollusks
2 cups red wine
2 cups tomato juice
2 cups fish or shellfish stock
An herb bouquet of bay leaf, parsley, and basil wrapped in a layer of cheesecloth and secured with kitchen string
Salt and pepper to taste
1/2 cup minced parsley for garnish
Optional seasonings: a dash of Tabasco sauce and or Worcestershire sauce

Method


1 Steam mollusks (clams, mussels, oysters) in a small amount of water (about a cup) until they just open. Set aside. Strain and reserve the cooking broth.

2 If using crab, removed the crab legs from the body and use a nut cracker to crack the shells so that the meat can be easily removed once it is served (leave the meat in the shell). Break the body in half, and then cut each half again into either halves or thirds. Keep the top shell of the crab for making stock.

If you are using lobster, cut the tail in pieces and reserve the body and legs for making stock.

Note you can use prepared fish or shellfish stock, or you can make your own. If you are not making your own stock, you can discard the crab top shell or lobster body. If prepared shellfish stock is not available, I would combine some prepared fish stock (available at many markets, including Trader Joe's) with clam juice.

3 Split the shrimp shells down the back and remove the black vein. (See how to peel and devein shrimp.) I found the easiest way to do this, without removing the shell, is to lay the shrimp on its side and insert a small knife into the large end of the shrimp, with the blade pointing outward from the back (away from the shrimp and your hands). Once you have split the shrimp shells, you can turn the knife toward the shrimp, and cut in a little to find the black vein. Pull out the vein as much as you can. You can probably also use a pair of kitchen scissors to cut the backs of the shrimp.

Alternatively, you can shell the shrimps and devein them. Shell-on imparts more flavor; shell-off is easier to eat.

4 In a deep 8-quart covered pot, sauté onions and green pepper on medium heat in olive oil until soft. Add the garlic, sauté 1 minute more. Add tomatoes, broth from the mollusks, red wine, tomato juice, fish or shellfish stock, the herb bouquet, and salt and pepper to taste. Bring to a simmer and cook, uncovered, for 20 minutes. Remove herb bouquet. Taste and correct seasoning.

5 Add the fish and cook, covered, until the fish is just cooked through, about 3 to 5 minutes. Add the steamed mollusks, crabmeat, and shrimp. Heat just until shrimp are cooked (just 2-3 minutes, until they are bright pink). Do not overcook.

6 Serve in large bowls, shells included. Sprinkle with minced parsley. Serve with crusty French or Italian bread and a robust red wine. Have plenty of napkins available, a few extra bowls for the shells, and nut crackers and tiny forks for the crab.

Chipotle Lime Bacon-Wrapped Shrimp Recipe

Ingredients

* 12 large, raw, peeled and deveined shrimp
* 2 Tbsp olive oil
* Zest from 1 lime
* Juice from one lime (about 2 Tbsp)
* 1/4 teaspoon chipotle powder (or more to taste)
* 6 strips thin bacon, cut in half (12 pieces)
* Skewers (for grilling) or toothpicks (for oven)

Method


1 Mix together in a small bowl the lime zest, lime juice, olive oil, and chipotle powder. Put the shrimp in the lime chipotle mixture; make sure each piece is well coated.

2 Spread the bacon pieces out over several layers of paper towels on a microwave-safe plate. Cover with another layer of paper towel. Microwave on high until the bacon fat begins to melt but the bacon is still pliable, about 1 1/2 minutes.

3 Prepare grill on high, direct heat (if grilling) or preheat the oven to 450°F.

4 Working one at a time, wrap a half piece of microwaved bacon around each piece of shrimp. If you are grilling, thread the shrimp onto long, flat skewers (flat skewers make turning the shrimp on the grill easier). If you don't have flat skewers, I've used two thin bamboo skewers (soaked in water for 30 minutes beforehand) to the same effect. If you are using the oven, secure each the bacon onto the shrimp with toothpicks. Place the bacon-wrapped shrimp on a slotted baking pan (lined with foil inside for easy cleaning). Brush remaining lime chipotle mixture on the outside of the bacon-wrapped shrimp.

5 Grill uncovered for 5 to 7 minutes on each side, or bake in the oven for 10-14 minutes, until shrimp is pink and the bacon is crisp.

Makes 12 pieces.

Baked Stuffed Clams Recipe

Although this recipe calls for fresh clams, you can also make this with canned minced clams (use one 6.5 ounce can, drained of all but 1 Tbsp of clam juice). Bake as directed on clam shells, or bake in a casserole dish and use as a dip with crackers.

If you've purchasing clams, keep them in the refrigerator covered with a damp, wet towel. If you have dug up your clams, keep them covered with cool sea water in a bucket. Throw away any cracked or broken clams.
Ingredients

* 10 large chowder or quahog clams, rinsed, sand and grit removed
* 3 Tbsp minced onion
* 1/2 cup butter (1 stick)
* 2 Tbsp chopped fresh parsley (or 2 teaspoons dried)
* 1 clove garlic, minced
* 1 Tbsp lemon juice
* 1 cup bread crumbs
* 1 Tbsp clam juice (or cooking liquid from steaming the clams)
* Salt and freshly ground pepper to taste
* 1/4 cup grated Parmesan cheese

Method


1 Fill a large pot with 1 1/2 to 2 inches of water. Bring water to a boil. Add the clams to the boiling water. Reduce the heat to a simmer and let the clams steam for approximately 6-10 minutes, until the shells open. Remove clams from the pot and let cool enough to handle. Discard any clams that have not opened (if they haven't opened it means they were dead to begin with and should not be eaten).

2 Remove the clam meat from the clams (not the clam foot which is attached to the shell) and mince finely. Break apart the clam shells from their hinges. Rinse. Pick 10-12 of the cleanest, nicest looking clam shells and set aside.

3 Preheat oven to 350°F. In a sauté pan, melt the butter on medium heat and add the minced onion. Once the onions have softened (2-3 minutes), add the garlic. Cook the garlic for 1 minute, then add the parsley, bread crumbs, minced clams, lemon juice, and clam juice. Stir until the stuffing mixture is completely moistened. (If too dry, add a bit more butter or clam juice; if too wet, add a bit more bread crumbs.)


4 Lay clam shells on a baking dish. Scoop a little stuffing mixture onto each clam shell. Sprinkle with grated Parmesan. Bake for approximately 20-25 minutes, until Parmesan is lightly browned on top.

Becca's Jambalaya Recipe

Ingredients

The ingredients are listed in amounts appropriate for a jambalaya batch for serving 12 people. You can easily double or triple the recipe.

* Andouille and smoked sausage, sliced 1/4 inch thick - 2 cups
* Tony Chachere's Creole Jambalaya Dinner Mix - 1 8-oz box
* Water - 2 1/4 cups
* Uncle Ben's converted original long grain rice - 1 cup
* Chicken broth (homemade is best) 2 1/4 cups
* Onion - a mix of yellow, red, and green onions (tops included), all chopped - 2 cups total
* Bell peppers - a mix of yellow, red, and green, all chopped - 2 cups total
* Celery, chopped - 1 cup
* Garlic, minced - 1 heaping Tablespoon
* Bay leaves - 2 (Make sure they are fresh and strong, if not, add more)
* Whole cooked tomatoes - 1/3 of a 32-oz can, break up the tomatoes with your fingers as they go in, reserve the tomato juice to add if necessary
* Diced tomatoes - 1/3 of a 14-oz can


* Tomato sauce - 1/3 of an 8-oz can
* Sugar - 1 pinch
* Dried thyme - 1 teaspoon
* Tabasco sauce - several sprinkles
* Oregano - 1 teaspoon
* Cayenne pepper - 1/2 teaspoon
* Tony Chachere's Creole Seasoning - to taste
* Fresh Shrimp, in shell, but cut to make it easy to remove from shell - 1 1/2 to 2 lbs (Remove shells and store shrimp in ice water while shelling.)
* Lemon juice - juice of half a lemon for each lb of shrimp
